She adopted a wild coyote pup after its parents were killed. She posts marvelous photos and short stories about the coyote and its friend, her kitten. Somehow it reminds me of the spirit of the Nurse's posts here, although its an entirely different subject. Jambalaya w/Rice<BR/><BR/>1 Cup diced cooked ham<BR/><BR/>2 Tablespoons butter or margarine<BR/><BR/>1/2 Cup chopped green pepper<BR/><BR/>1/2 Cup chopped onion<BR/><BR/>1 small clove garlic, minced<BR/><BR/>1 medium bay leaf<BR/><BR/>1 Can (10 3/4 oz) condensed tomato soup<BR/><BR/>1/4 Cup water<BR/><BR/>1 Cup cooked shrimp<BR/><BR/>1/8 Teaspoon salt<BR/><BR/>1 1/2 Cups cooked rice<BR/><BR/>Generous dash of crushed oregano<BR/><BR/>Dash of pepper<BR/><BR/><BR/>Lightly brown ham in butter. Add pepper, onion, garlic and bay leaf. Cook until veggies are tender. Add soup, water, shrimp and seasonings. Heat. Remove bay leaf. Stir in rice. Heat a few minutes more. Makes 3-4 servings. <BR/><BR/><BR/><BR/>Dessert ... Tahitian Ice Cream Cake<BR/><BR/>12 Ladyfingers<BR/><BR/>1 Can (8 oz) crushed pineapple<BR/><BR/>1 Pint strawberry ice cream softened<BR/><BR/><BR/>Line bottom of 8 inch square pan with ladyfingers. Spread with ice cream and top with pineapples. Cover and freeze. 6 servings <BR/><BR/>Enjoy ...
