IT'S FRIDAY....SO LET'S PRETEND WE ARE GOING TO HAVE A REALLY BIG BBQ...WHAT WOULD YOU BRING? I WOULD BRING MY FAMOUS CORNBREAD....


Okay...so it has been an odd day...Princess Xena has been sick, so I am a little sleep deprived...and behind on posting..my apologies....I have a craving for Cornbread...and since Kid nicely said we need a Receipe Day...I agree., So please do leave me reciepes , we need a Feast..( and since I am going to try to make my dear Xena some homemade chicken, which I am sure will make her feel better...) And yeah, while I have been cooking I have been watching Scotty the Pinyatta testifying and the Whitehouse and the Plamegate Coverup...hmm, some "I don't remembers" but there have been a few little snippets that are damning of Scooter and Rove and yes, even his White House Bosses...I know little yellow dog Lilly is going to be so happy when the Cornbread comes out of the oven.....Her nose is a twitching...I am working on my book "Silent Fallout and Watery Lies " ( by the way I think I am going to go back to calling it Silent Fallout- the other title is too damn long...I should have 3 new chapters up this weekend over on the Blogroll- up by the top.)

So here is the thing , whenever I cook Cornbread I listen to Fleetwood Mac, I have no idea why.....But here is the Friday Night Music...and I think pretty good Solstice Music..."The Chain"....

So Talk to me...How is you First Day of Summer Going? Do you have a BBQ receipe you wanna share?? I betcha do...here is my quote that I wanted to share as a final thought....

BTW, more crime: The Dems caved on the FISA bill AND war funding. All Nancy Pelosi has to do is give Cheney the Medal of Freedom and we'll have a tri-fecta.

I guess it's fitting that for Soltice we will be 106-degrees. Yeah, the heat is on here, a sirocco is blowing today.

I always made the potato salad for BBQs. Slightly undercook (so they remain firm) halved mostly (but not all the way) skinned red potatoes the day before. My secret is to marinate in the refigerator the cooked red potatoes overnight in some Bernstein's Italian Dressing (use a wide pan & turn them over a few times so all sides absorb the Bernsteins).

The next day mix up all the stuff you normally put in your p-salad in a big bowl. I go heavy on dijon mustard, but that is a personal taste. So, dill pickles & celery & mayo (you'll use less mayo than normal because of the marinating) & mustard & salt/pepper, and peas -- got to have petite peas in your p-salad, but not too many.

After you've prepared your mixture, cut up the marinated potatoes into bitesize chunks & LIGHTLY toss into your mixture. Throw out the leftover Bernsteins; don't add it to the p-salad; it will be very starchy now.

I put well-drained olives & sliced hardboiled eggs & barely cooked asparagus tips on top (sometimes I spell a name or make a smiley face w/them) & sprinkle w/hungarian paprika.

I can't stress enough to not overcook the potatoes. Nothing is worse than mushy p-salad. Same w/waiting to cut up celery; limp celery sucks.

Ah, summer. I love it. I don't have a barbque recipie to share but I do have a great shrimp salad:

1 lb shrimp, peeled, deveined, cooked.
1 lb peas, shelled and cooked (or a bag of frozen peas)
Scallions, chopped and chopped
Carrots, chopped and chopped
Macaroni Shells, cooked al dente

Curry Mayonaise

Cook all the stuff up, mix in a bowl, bring to room temp, add the curry mayo, and chill. Enjoy.

hmmm, Diva, is "chopped and chopped" a double-chopping? as in "finely chopped"?

Yours sounds so good I may have to make it tonight! I have everything but the curry mayo (but I have curry powder & regular mayo, so I think that'll work). Interesting to wait til it's all room temp before adding the curry mayo. Guess that brings out the flavor better? I'm not much of a cook when it's this hot, but this sounds perfect for a hot night. I'm gonna add chopped (and chopped) fresh Italian Parsley, OK? And some sweet orange slices & black grapes on the side.

What wine? All I have in the cabinet is a dry sauvignon blanc and a pinot noir (we are not wine snobs). I think the blanc? You know here in UT I can't just go buy wine anywhere; I have to go across town to a state liquor store where the prices & hours are heavily regulated.

hmmm, oranges and Curry - oh yes, that is a great idea....I don't really drink wine so I can't help you there....( sorry I am more of an Ice Cold Beer or a nice frozen drink....)like hmm, shrimp salad to me says ICED TEA ....maybe some nice Oolong Iced Tea??? ( with cinnamon and brown sugar)....

I just use curry powder and mayo - and if you put the mayo in while it's too hot, then it makes the mayo go bad. Wait til it is room temp, mix it up real good (as opposed to blowing it up real good) and then chill. As for chopping and chopping, I am a religious zealot so I just bandy words about willy nilly.

about the chopping- I just love the idea of watching DK chopping every twice and wondering if it was chopped enough ..lol....ahhh about the Curry- see I knew you wouldn't leave us hanging...probally good that there is NOT Curry Mayo- ekkkgads I would put it on Everything....so Yellow or Red Curry- does it matter...( I am a huge Red Curry fan....I think adding oranges sounds good too...alhough it might mess up the mayo...)

personally I would use yellow curry, but the oranges are definitely going on the side (not in the mayo). yes, I do tend to chop & chop anyway, so with Diva saying it twice, I will probably be chopping for hours! Ice tea is good, or I could do wine coolers.

Calico Beans
1 can kidney beans-rinse/drain
1 can butter beans-drain
2 (16 oz) cans pork&beans
1/2 # ground beef, browned
1/2 # bacon, cubed & browned
small onion, chopped/browned
Combine all. Bake 1 hour @ 350 degrees.
[I just made a batch for 200 for my niece's H.S. graduation party tomorrow. It should be a fun party.]

Orange Chicken Shish Ka Bobs...

Boneless, skinless chicken cut into 2 inch-ish cubes
(frozen) orange juice concentrate, thawed.

Take the cut up chicken & put it in the orange juice concentrate ~ Marinade overnig. Add a little bit of water, if needed to make sure all the chicken is covered.

Red Bell pepper (sweetest, but other colors will do!)
Videla sweet Onion

Take your cubes & skewer with chunks of red pepper & onions or tomatoes (if not toxic!)

BBQ on the grill toss out the remaining orange marinade.

Slow cook on the grill. You can add a little Worchestire sauce on the chicken to keep it from drying out while grilling...

A nice orange flavor, & grilled veggies are yummy ~ something about grilling bring outs the flavor.

yogurt fruit salad.

High quality yogurt- either plain or vanilla

fresh seasonal fruit.... bananas, strawberries,blueberries, peaches, nectarines....etc....

a little sprinkle of cinnamon to the mix

I'm saving that cornbread recipe. It sounds really good.

I unfortunately cannot remember many recipes at the moment, for I haven't had a stove to cook on in years. I'd have to practice first on some unsuspecting persons before showing up at your BBQ.

I'll bring the 'huzaren' salad, a Dutch version of potato salad. Oh and drinks, lots of it (seeing that you'll have at least 20 people showing up lol)

plus I'll bring slowly bbq'd chicken that has been marinated in pineapple juice and basted with pureed spiced onions with pineapple juice and curry..

I was going to bring my potato salad and then I read up above. DK uses my trick of the overnight marinade of the potatoes and Here I thought I was famous for the "secret ingredient" : )

So it will be classic bread pudding with brandy sauce for desert.

Bread and Butter Pudding
Twelve ½ inch-thick slices French or Italian bread, crusts removed and buttered generously on one side
5 large eggs
4 egg yolks
1 cup sugar
¼ tsp. salt
1 quart whole milk
1 cup heavy cream
1 tsp. vanilla extract
½ cup confectioner’s sugar
1 cup heavy cream for serving

Preheat oven to 375 degrees. Butter a shallow two-quart baking dish.
Gently beat the eggs, egg yolks, granulated sugar and salt until thoroughly blended.

Scald the milk and cream in a saucepan over high heat. Don’t boil. When you tip the pan and it spits or makes a sizzling noise, remove from heat and stir in vanilla extract. STIR GENTLY, don’t beat, into the egg mixture until blended.

Overlap the bread, butter side up, in the prepared baking dish and pour the egg mixture over the bread. Set in a larger pan with enough hot water to come halfway up the side of the dish. Bake until bread is golden-brown, about 45 minutes until a sharp knife can be inserted and comes out clean. The bread should be golden. This can be done early in the day. Do not chill.

Before serving, sprinkle with confectioners sugar and place under the broiler. Don’t walk away, this takes only a minute or so. Or you can use one of those crème brulee gadgets to brown the sugar.
Serve with a pitcher of heavy cream or Brandy Sauce below.

Sauce
175ml (6fl oz) Milk
80ml (3fl oz) Brandy
2 egg Yolks
1 level tsp Arrowroot or Cornflour
1 tsp Light Brown Sugar
Blend arrowroot with a little cold milk.
Heat the remaining milk and when boiling stir it into the blended arrowroot.
Return mixture to pan and bring back to boiling point.
Mix together egg yolks, brandy and sugar.
Allow the arrowroot sauce cool a little, whisk into the egg mixture.
Cook without boiling, whilst whisking until the sauce thickens, if too thick add a little milk or cream to slacken.
Serve hot

Wowzer....Bread Pudding of ANY kind omg....too wonderful....( yeah we have a couple of potato salads above-ALL good- the more the better...) Isn't it funny that we "Invent" something and then find out how many others use it ??? I love this bread pudding receipe....I am trying this as soon as possible....thank you....

Sorry, I have no receipes. Don't cook either -- that's wimens work. (ducking...) Haven't actually seen a cookout in 30 years either.

I'll have the Calico beans, the skewered chicken, some fruit, a salad, and a couple glasses of wine. And whatever else looks good.

I'll bring a chair, a plate, a fork, and the wine and bourbon. ;-)

I'd donate my gazebo and make sweet tea. Good quality loose Earl Gray brewed in a teapot and cool at room temperature. I'd pick fresh mint and buy a lemon for those who like their sweet tea garnished.

Wonderful tea...I love any and all tea...loose or bagged, fresh pot or Big Ol'Jar Sun tea....and a Gazebo is just what we need for this Virtual BBQ...lovely....


Now on to "serious" matters ? Hmm, Fiction , no , not really....never have... I am working on my book ( over on the blogroll Silent Fallout& Watery Lies- needs a title change..) but that is non fiction....I write a little poetry...but while I am working on the book- I don't think my brain could work on fiction at the same time...But I appreciate you thinking of me ;-)

Lets see, i'd have a nice juicy grilled ribeye or porterhouse steak preferably bison, or grilled copper river salmon with a chipolte/mollasses glaze as the main course along with grilled clams casino, corn on the cob, french fries and my famous hot cajun jambalaya rice.

BTW enigma, i really liked your post over at Lydia's i couldnt agree more with what you said.

I couldnt agree more with what you just said here as well.........Pelosi, Reed, Hoyer, Clinton are disgraces, i have said i will support and fund anyone who runs against these losers and so far i have done exactly that
